made it out to chase some sea ducks and pretty good, first time I was picky enough to shoot just drakes :) sea duck 11-25-2013.jpg
last time went out and got a really nice harlequin that I'm going to get mounted... by far the nicest one I have ever shot!! harley.jpg

I've always struggled with getting sea ducks to taste good. What's your brine and preferred recipe?

I have had real good luck with brining them - first in salt water for a day and then milk for a couple days and then in whatever spices I conjur up for another day prior to cooking. :nyanya:Cedar loves em that way.....JUST KIDDING (cedar is my dog)......last time a month ago we did that, and then wrapped em in 1/2 cooked bacon and put them on the grill. Our guests and us ate so much we almost didn't eat the salmon and shrimp that was the main course.

They were tender and not very gamey. I think that the soaks are very important.

I end up making a lot of jerky out of them too - Can't even tell its Duck, other than it tends to be fairly oily...
