I've heard that hand loading large gr bullets is a problem in one of these calibers, not sure where I heard it or which one. Anyone know of any truth to that.

The 300 WSM was made to compete against the 300 Win Mag but in a smaller package. Once you start putting bullets of over 180 grains in the 300 WSM case, you start losing case capacity and the whole reason it came to exist and that was to compete against the 300 Win Mag.
There is some truth to the whole don't go over 180 gr's on the 300 wsm but it doesn't mean that it won't work. I have a winchester model 70 that I handload 200 gr accubonds (which are pretty long bullets) at 2,825 fps with IMR7828 powder. Not a huge diference from the 300 win mag. But the 220 gr bullets might be a problem thoughe. I have never tried loading the 220's as of yet.
I load 180 Interbonds in my 300 wsm and get 3000 + vel with excellent accuracy. When the 325 first came out I caught my interest with the factory velocities of the 180 and 200 grn bullets. I was already getting velocities out of my 300 wsm that the 325 factory loads were being advertised at. So I bought a box of 200 grn accubonds just to see if I could get a load to produce. I was able to get 2930 as an average with 1" accuracy. I use RL-19 powder and stayed with my 300 wsm.
I've been looking the ballistics over between the 300wsm and the 325wsm, I'm going to buy one just haven't quite decided. I tend to think along the lines of Muledeer. I think you can push a 200 gr 300wsm pretty close to that of the 325wsm, close enough that I think I'll lean toward the 300wsm. I think that would be good enough on moose, caribou and even the brown bears.
