I'm back from TWO ocean charters with a freezer OVERFLOWING with some dang 'expensive fish!'


Ha ha ha.... Funny stuff man. I was in the exact same position a few years back. That is why I started this thread. A country boy from NC has no idea what to do with that much hablibut.

Tons of ideas now. Got to love this forum:)

I grilled a bunch (on the outdoors 'man grill') :D and took some to work the past few shifts.
When the staff asked what I was eating, I replied "It's a meal with a 'carbon footprint' as big as it's taste!"

Then, of course, I got to explain the flight, the RV, the fishing Charter X2, the freezing and shipping, the cooking AND the personal transport to the ER for consumption!

I'll be trying my hand at a new approach to preparation tomorrow night! :eek:

Quick 'n' Easy Halibut

Ok - not really a "recipe", but for the lazy cook (that'll be me six days out of seven) here's what's worked great, even my mother-in-law had nothing but good to say about it: I soak the halibut filets in Caesar dressing covered with capers for 2 hours before cooking, then either bake in the oven for 15-20 min at 350 or 10 min in a stainless steel pan on the stove top. Great with rice and garlic broccoli.

Put some butter in a pan. Use the butter to cook some bacon. Remove the bacon and place thawed halibut into the butter/bacon grease and pan fry. Remove when done and cover with Newmans own Medium corn and black bean salsa. It is exelent with a spoon full of sour cream and some fresh greens.

you may want to try this, very simple
get yourself couple packs of instant potatoes
put in a plat, put salt and pepper and mix it around, have your fish ice cold dry and roll in the potatoes, i use a brown paper bag and shake my fish in the potatoes.
put you some oil in a cast iron pan, get it hot, slide the fish in get one side brown and crispy flip it over and do the same thing, never over cook the fish
reminds me of hash browns crunchy with that fish is out of this world

My Wife's favorite Halibut dish

This one is kinda fancy and requires a lot of prep time...but is well worth it. All of the ingredients compliment the halibut and don't overpower it.

Ingredients
  • 3 tablespoons vegetable oil
  • 1 cup thinly sliced yellow onion
  • 3 cloves garlic, thinly sliced
  • 2 cups diced tomato
  • 1 medium jalapeno, diced
  • 1 cup dry white wine
  • 2 tablespoons butter
  • 4 (8-ounce) halibut fillets
  • 1 teaspoon kosher salt
  • 1/2 cup Spanish olives, cut into thin rounds, plus 2 tablespoons olive juice from bottle
  • 2 medium avocados, peeled and sliced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons freshly chopped cilantro leaves
Directions

Preheat oven to 350 degrees F.
Heat oil in a medium skillet over medium heat. Add onion and garlic, and cook until lightly colored, about 3 minutes. Add tomato, jalapeno and white wine. Cook until wine is reduced by 2/3, about 5 to 7 minutes. While sauce is reducing, heat butter in a separate skillet over medium heat. Season fish with kosher salt. When butter is melted, add halibut to the pan. Cook for 2 minutes, flip over and then transfer pan to preheated oven and bake until cooked through, about 10 minutes. Remove sauce from heat when reduced and stir in olives and olive juice.
To serve, divide sauce equally among 4 dinner plates. Place halibut (first caramelized side up) in the center of each plate on top of the sauce. Place avocado slices on top of fish, sprinkle with lime juice and cilantro, as garnish.

Halibut Recipe

My family. friends and co-workers enjoy these two recipes I cook the best.

1 box of McCormick Golden Dip Beer Batter.

1 bag of Panco

Halibut

Mix Beer Batter with "water" adding a little at a time while mixing with a wisk. Make it kinda thin. Let is stand for 30 minutes or so if you can.

Cut Skinless Halibut in thin 3/4 inch strips

Dip in the batter, then roll in Panco

Preheat your Oil to 310 degrees.

Drop in Fryer. When fish floats to the top, its done. Don't overcook and dry it out.

Make some fresh cut french fries and sprinkle with garlic salt.

A meal fit for a king.



Second Recipe Garlic Lemon Halibut

Cut skinless halibut in 3/4 inch strips

Take a sauce pan, coat with Olive Oil and Add 1/3 cup of Minced Garlic. I usually buy it at Costco by the tub pre-minced.

Brown/Carmelize the Garlic until golden brown or almost Burned. If it burns a little, thats OK
Once Carmelized, Add 1 Cup of Sweet Cream Butter. No Margerine Please.

Select a large Skillet and Get it Hot.

Coat the Skillet with ample Garlic Butter.

Add flour to a ziplock bag and coat the halibut in flour.

Quickly Add Halibut Strips and turn immediatly to coat both sides with the butter. Squeeze fresh lemon over the Halibut and sprinkle a little garlic salt. Turn over within a minute. With heat on high, let fish brown. Don't cook to much fish at once. About 1/2 a pan full at a time, and wipe your pan down before cooking the next batch.

This works well with Shrimp and Scallops also.

Our favorite hali recipe.
Coat stainless fry pan with olive oil and heat. Cut halibut portions to preffered size. Dip fish in white flour, then egg whites, followed by a mixture of panko and itallian seasoning. Cook fish until nice and brown and set aside. Using the same pan with remaining oil and fish drippings brown 3 cloves of minced garlic, a tablespoon of butter, ground pepper, and a couple tablespoons of capers. Allow garlic to brown and add a cup of cheap white wine, cook off the alcohol. Serve fish over pasta and sauce with wine/garlic mixture. MMMMM

Had to add this one to my site, got tired of emailing it out.

Frank's Halibut Italyian



Cut fillets into serving sized pieces, drizzel a teaspoon of olive oil into glass baking dish, place filets in dish, in a small bowl add 1/2 cup mayo, 2 tbsp basil pesto, pinch of chopped garlic, juice of half a lemon, stir, then spread into top of filets, sprinkle with fresh grated parmesan, bake at 350f until it flakes, serve it up. There won't be any leftovers!

This recipe was fantastic to tonight...thanks for sharing! There definitely was no leftovers..

Ok, finally got it to the computer -

2 lbs. Halibut
3 cups Milk
2 8oz package cream cheese -room temp
3 cans Campbell cream of potato soup
2 cans Campbell cream of mushroom soup
1 can corn
1 cup chopped green onions
1 cup chopped celery
1 cup chopped carrots
garlic powder
salt & pepper

Cut cream cheese into pieces, place in blender, slowly add milk, do in batches if need be. Pour mixture into large pot over low heat. Add all ingredients EXCEPT Halibut. Cook on low heat. Fry Halibut in butter until done, break up and add to pot. Add garlic, salt, pepper to taste. Cook on low heat until carrots are done stirring often.

This is the recipe as it was given to me, I substituted some of the milk for heavy cream, I think it made it just a bit thicker/creamer. But I have also had it the other way and is very good also.

This is a GREAT recepie. I think I'm going to try it with salmon as well!

I will share one I came up with.



Halibut Corn Dogs

Serves:
4 servings

Ingredients
Halibut Corn Dogs:

Salt
1 lb Halibut Fillet
1 cup yellow cornmeal
1 cup all-purpose flour plus 4 tablespoons
1 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cayenne
1 cups buttermilk
1 ear of corn cut from cob and creamed
1/3 cup grated onion
1 roasted jalapeno (roast under broiler remove place in plastic bag to steam, peel deseed and finely dice)
1 tablespoon honey
Peanut or vegetable oil, for frying

Aioli:

Zest from 2 lemons
1/8 cup fresh lemon juice
1 tablespoon minced shallot
1 teaspoon minced garlic
1 cups mayonnaise

Garnishes:

Paprika
Chopped fresh chives
Chopped fresh cilantro

Directions

For the halibut corn dogs: Allow the fish to warm up to room temp, if it is COLD the crust will get done before the fish. Slice into strips about one inch wide and 3 inches long. ). Skewer the halibut strips, using the 4 tablespoons of flour, season and coat halibut with flour and spices and allow to sit for 10 minutes.

Combine the cornmeal, flour, 1-teaspoon salt, baking powder, baking soda and cayenne in a medium bowl. In a separate bowl, combine the buttermilk, creamed corn, jalapeno, onions and honey. Add the wet mixture to the dry mixture and mix with a whisk. There will be lumps when done. Pour the batter in a container. Use a drinking glass or other deep vessel to make battering easier.

Preheat the oil in a deep-fryer to 365 degrees F.

Dip each skewer into the batter, making sure to coat evenly. Carefully drop into the fryer and cook for 3 to 4 minutes. Remove and let rest on paper towels for 2 minutes to cool so the aioli doesn't melt off.

If they are browning before done,, finish cooking fish in the oven.


Keep warm in preheated oven at 250 until all are cooked and ready to serve.

For the aioli: In a blender, puree the lemon zest, lemon juice, shallots and garlic. In a bowl, fold puree into mayonnaise and place into a squirt bottle.

Drizzle the lemon aioli onto the halibut corndogs, and garnish with paprika, chopped chives and cilantro.

Buffalo Halibut,,

This one is quick and easy.

Use Halibut cheeks or cut fish into small cubes.

Spice both fish and some self rising flour. Toss the fish into the flour and lightly coat. Place on a wire rack and allow to come up to room temp and let the flour form a coating. 10 to 15 minutes.

Heat a small amount of oil in a non stick skillet, heat until the oil starts to smoke and then quickly saute to fish. It cooks quick, DO NOT over cook.

Just as it gets done,, pour in your favorite Buffalo wing sauce. Toss quickly and serve while hot.

We like fried cheese qrit cakes, but mac and cheese goes well too.

Chunk up some halibut and wrap them with bacon strips. Throw em on the grill...

Fill the pint jars with fish within 1/2" of the top, add a couple of teaspoons of olive oil and a teaspoon and a half of chicken bullion powder.
Seal jars and cook 100 minutes at 10 lbs in the pressure cooker.
For us, it is as good as ice-cream, hard to walk by the fridge without grabbing a forkful.
