What's everyone's favorite seasonings for doing breakfast sausage or anything else they process themselves?

Easy to spice up a store bought packet. Fry up a patty and adjust as needed.

Just used the AC Leggs seasoning for breakfast sausage and Italian sausage and it worked great.

I've used a bratwurst seasoning from AK Butcher Supply and it was awesome! Butch said they have it made specifically for their shop. If you haven't been there and have questions, stop in and talk to him. Super willing to pull out books and such and tell you all he knows. I'll be in there soon to see about summer sausage or something of that ilk.
