Caribou Jerky Marinade

Had some bou giving to me this year so I bought a slicer and a dehydrator and was going to turn some of it into jerky.

What are some of your recipes for the marinade?

I highly recommend the High Mountain Jerky seasoning. You can't mix your own for the $7.99 they want for the kit at Sportsmans.

Also, it is much easier to slice if the meat is soft frozen.

This simple internet marinade has proven delicious with moose (cheap slicer and cheap dehydrator- about 3hrs on high after 3 to 6 hours of marinating). I try to cross cut against the grain and like the drying/shrinkage results of a 1/4 inch slice. Maybe a bit smaller.

2/3 cup worcestershire sauce
2/3 cup soy sauce
1 tablespoon honey
2 teaspoons freshly ground black pepper
2 teaspoons onion powder
1 teaspoon liquid smoke
1 teaspoon red pepper flakes

Thanks fuhrerak, I think I will try both. No moose this year so just going for the Bou.
( I think I have all the ingreedants mentioned here in the pantry)

Curious tho why some cut with the grain and some cut across the grain.
