Is this the right time to start tapping the trees for syrup? It's been awhile since I have been up this way and can't really remember the right time for it. The kids are ready and I don't want to miss it again. Thank you for the help.

From Sugar Maple experience typically the best time is between February and March. I'm sure it's the same with Birch. It could possibly still work in late March. I'd definately give it a try soon if you were going to try at all. Good luck! Hope you get some!

No dripping here yet. I live on KGB road. I usually wind up with molasses. I think a distiller would help make syrup. We like the molasses though. We use it in bread and smoked salmon recipe.
