I am fairly new to reloading and have not tried anything like this before. .325 wsm brass right now is a bit pricey but I can find reasonable .300 wsm brass all over the place. Is making 325 from 300 wsm just as simple as running it through the sizing die that came with my die set?

If the neck sizing button that came with your die isn't tapered, I'd ask them to send you tapered one. Lube the inside of the necks with a little Imperial Sizing Wax and you're good to go.

Just make sure none of your 300 WSM shooting friends grab any of your 300 headstamped 325's and try to run them through their gun. They'll regret it.

325 I doubt would chamber in a 300.

Chamber neck diameter spec of the 300 = 0.345-0.346"
Outside neck diameter spec of the 325 = 0.350"
I wouldn't underestimate the ability of someone to shove a 325 into a 300 chamber and jamb the bullet into the throat/lands. Seemingly less probable feats of stupidity are accomplished by determined shooters all the time.

I don’t think your numbers are correct

I do take your point

Maybe. I don't shoot either of these, so I had to look up the drawings for my own benefit. Am always willing to be corrected with actual (not "alternative") facts.
I’m not around my loading room at the time. I don’t delve into alternative. The difference between the two is 15 hundredths. It would take hydraulics to chamber a 325 into a 300.

Tell ya what: you bring a factory chambered 300 and I'll buy some factory 325. If I can't chamber it in your gun I'll buy you a beer; if i can chamber it, you provide the hydraulics to extract it! 😘
