    I just got back from a successful goat hunt. I choose not to cut my a rear quarter. It weights about 8 lbs. I also harvested the caul fat from around the stomach. I plan to:
    1. Brine the leg for 48 hours
    2. Wrap in caul fat
    3. BBQ for 8-12 hours at 275-300F in a pellet smoker wrapping in foil at the 6-10 hour mark.

    Anyone have any other tips/tricks/suggestions/recipes for smoking/bbqing a leg of goat?
