  • Best Method post catch for sashimi

    Besides bleeding a salmon and processing it quickly, what additional steps do people take to ensure their fresh salmon is suitable for sashimi? I just started eating some sashimi and would like to try with some salmon I caught myself. Does a residential deep freezer get cold enough to freeze it properly? Thanks!

      Look up ikejime for how to dispatch fish and good preservation methods for sashimi. As you know, salmon sashimi is a huge problem because of the parasites and it's why the Japanese eat farmed salmon in sashimi. You can buy a fridge/freezer thermometer for a handful of dollars and find out if what you have will get your salmon to the proper Temps.
