Muskrat?

    Interesting topic. I havent had muskrat since I left Michigan. As someone earlier posted, it was a table fare in SE Michigan, specifically in the flats region where there was a significant number of trappers. There was always a yearly fund raising event in which the local Lions club served Muskrat. I liked it. I grew up in an area called Harsens Island, an island surrounded by water, a freshwater delta region.
    Muskrat compares to beaver, although I prefer beaver, which has a more meatier flavor. Muskrat is a little more like rabbit in texture and flavor. I certainly would not hesitate to eat muskrat. Regarding the illness someone may have incurred from eating muskrat, Giardia and Cryptosporidium come to mind, but with any meat, if undercooked you run risk.
