  • Canning Bear Meat?

    Hello All,

    I'm interested in canning/jarring some spring black bear meat. I've canned salmon before, but never game meat. I'm looking for any and all suggestions you can share. I've got the basics of canning down, but it would be great to have some ideas about what spices to include as well. Any other suggestions appreciated. Thank you,

    I don't have a recipe, but a good place to start is the UAF extension office. They have recipes and times/pressures to use. I just never bothered to write them down.
    It ain't about the # of pounds of meat we bring back, nor about how much we spent to go do it. Its about seeing what no one else sees.

      I've done moose and blacktails. Throw in some root veggies and it will make it's own gravy. Much better than a Dinty Moore stew!
      Follow the canning directions and we add seasonings like some cajun shake, or garlic salt, etc...
      Experiment a little and find out what works for you.
