    Nice page! I learned some new things there.

    I think it might be helpful to include something about caring for the meat once you get it home, too. Nobody seems to write about that. Just as an example, one thing I've wondered about is what to do with the meat on the outside of the quarters that got dried out while I kept them cool & dry for days. Should it be trimmed off? Eaten as-is? Rehydrated somehow? I did a bit of all three I think, but it would be nice to hear from the experts.
