• Salmon Candy

Might not be the best spot for this, but normally when I make salmon candy I just freeze it.

Anyone know how it would turn out with being pressure canned? Normally when I pressure can its just normal smoke salmon, so I'm not sure how the hard pectin outside will handle being canned.

    Thoughts or concerns?!

    Thanks!

I have tried to can Salmon Candy a few times but never found it to turn out as good. It tended to be drier than I like and didn’t have the nice glaze to it.

I need a fool proof recipe for salmon candy, anyone willing to share? Keep in mind the "fool proof" aspect of this request

I don’t know if there is a fool proof way but it is pretty easy. I have tried several recipes (simple to complicated) without that much difference. Keep a close eye and test as you go to not undercook or overcook and it will turn out good.

Hank Shaw’s (link below) is fairly simple and good.

https://honest-food.net/salmon-candy-recipe/

That's exactly what I was afraid of. Thanks for the confirmation!
