Making the assumption the fillets are in the background......what kind of King is it? Cuban?

I ask because one of the Kings I caught on my last trip to Homer was white and not the "classic" salmon color.

I've dipped my cigars in brandy, wine, whisky and other things but never in a fish head....what a great idea!

When itss say in the teens for temps, I like to let the fillets firm up from the blast of wind on my way to the dock, kinda like my own blast freezer on board.
