    Looking for a recipe for rabbit sausage. Someone mentioned it in a thread on bunny jerky.

    Here's the one I use
    2 pounds ground rabbit
    2 tea spoons salt
    1 1/2 tea spoon black pepper
    2 tea spoons thyme
    1/2 tea spoon rosemary
    1 table spoon brown sugar
    1/2 tea spoon nutmeg
    1/2 tea spoon cayenne pepper
    1/2 teaspoon red pepper flakes
    I like to grind the meat with a fine blade and mix everything the night before you want to cook it up. I use a burger press and make 1/4 pound patties.

    Can you make it up and freeze it?

    So, it isn't necessary to put any kind of fat into the meat mixture? I have some moose fat I've been saving for something.

    I use domestically raised rabbit for mine, they naturally have enough fat so I don't add any extra.
    I make this recipe up in 10 pound batches, it works the same. Let it sit overnight to meld the flavore together, then press into 1/4 pound patties and vac seal to freeze for later.
    I've still got some from my last batch if you want to try it. I'm going to get some out in a minute for some biscuits and gravey.
