Get some seed potatoes from a local GH/nursery/feedstore.
Cut the eyes off getting about 1/2 -3/4" of the potato with each eye.
    4 or 5 + eyes per potato.
Plant about an inch deep about 12" apart. As they grow, hill up around them, the hill is where the potatoes will grow.
I hill twice & then cove the hill with grass clippings to help hold moisture & keep light off the tubers.
Keeping the growing tubers covered by about an inch is key. If the tubers/potatoes get
in the sun, they get a green color & are bitter.
Easy & fun & you get rewarded in a few months.
I like to grow a few types that normally aren't found in the grocery store.

    Default Spuds is fun

    Mud has it right.
Another option, depending on your space available, is to use containers.
The ol boy next door drops the cut eyes in a big flower pot with about a foot of dirt below them. Pots are about 15-20 gallon size. Covers it with an inch or two of dirt.
As the plant grows out of the soil, he just keeps covering them. By late summer the pot is full of dirt and potatoes.
Some of his bigger pots he'll dig out, but the smaller ones he just tips over to get his spuds.

I do mine like Mud, but I cover them again and again until I am out of dirt. My hills probably end up 12-14" tall. I'm gonna try the grass clippings, good idea.

    Have fun, they grow fast.
