    Does anybody know where to buy citric acid in Juneau?

    There is a homebrew supply store in Juneau, try there. The homebrew store in Anchorage carries it. Common ingredient for wine makers.

    Then, if you figure out the proper mixture of citric acid to water for meat application, let me know as I've been wondering....

    I bought it in Ketchikan in our health food store. The instructions on the bottle said 1 tsp per quart of water.

    A pH of 3 or less is reccomended by Larry Bartlett. Also Indian Valley meats directions come in around a 3 pH. The following link says 5.6 pH for inhibiting bacterial growth, but they are injecting it along with sodium citrate. So if you are going to spray it on the exterior of the meat a pH of 3 in the bottle probably is close to a 5 on the meat.

    where can you buy it around Fairbanks? Also, has anyone tried that "liquid game bag" they sell at SH?

    I tried the Indian Valley package...I would definitely buy it again.
