    Jarred up some great looking homegrown pickles today...
    How's the canning going out there for everybody?

    Probably gonna be a gallon at a time until the mother lode comes in.
    Many pickles yet to come judging by all of the flowers...

    Like to can them immediately after picking them;
    they seem to have a lot more snap.

    First year in a long time that I have had time to can anything, so I am making up for lost time. I have canned wild strawberry jam, blueberry jelly and syrup, raspberry jelly and syrup, fireweed jelly, low bush cranberry sauce and jam, and mixed berry syrup and jelly. The raspberry stuff is my favorite.

    The fire weed jelly is surprisingly good. I think the next project will be canning my green tomatoes before the first frost gets them.

    Eleven cases of mixed things - golden raspberry , red raspberry, blueberry, strawberry jam, zucchini relish, red currant and blueberry jelly, blueberry syrup. Been killing lots of weeds with hot canner water.

    Those pickles look very very good. The cukes did not do much. I could make a 1/2 pint of refrigerator pickles and a barely 1/4 pint of gherkins, haha.

    The zucchini outproduced everything and made 4 cases of relish. mmmmm.

    we have put up about seven cases, both quarts and pints so far. a mixed bag, smoked salmon, broccoli soup, vegetable stock (from the garden), black beans, white beans. then there's the 100 bottles of wine and mead. this week we'll be focusing on putting up berries, kale, chard, peas, so exciting!

    We started canning right after dinetting....

    Started with smoked/canned salmon



    Then of course we processed the salmon bellies....YUM!



    My first experience with sweet relish



    Then I decided to experiment with the relish by adding different peppers into the second batch.....

    and of course, raspberry jam.....which I hope sets up a little better in the next week or so...otherwise we have some really good syrup!






    Cucc's/pickles will be the next project but my dill died an early death so I'll have to locate some dill in the valley.
