    Simple but good. Roll trout in flour & cornmeal seasoned with salt & pepper, fry to a perfect golden brown, carefully remove spine and rib bones so you have two fillets then squeeze fresh lemon juice over filets.........Enjoy!

    Another variation is to stuff the trout then fry like above and put in oven for 10 min @ 350. I like a dungeoness crab stuffing with peppers, chives, breadcrumbs and seasoning like old bay or whatever you like.

    For large dollies and char I like to fillet the fish soak in a simple salt/brown sugar brine for no more than 15 min, let the fillets drain and air dry on a rack for 4-8 hours add lemon pepper , cajun spice or whatever you like then smoke. Great with cheese and crackers or make a chip dip.

    Take your whole/gutted trout and season the cavity well add some onions, lemon wedges, dill and butter then drizzle with a good white wine. Roll in foil and grill till just done (time depends on size of fish).

    All of these recipies are tried and true and you'll find many variations around.

    Soak trout or any fish for that matter in beer for 20 minutes then roll in MCcormicks cajun seafood fry mix then just deep fry it, very easy and tasty..
    Also its very good for Wild game finger steaks and game bird strips..

    At home we just gut, skin and wrap with bacon and grill over an open campfire. You just can't beat the flavor and fine company over a campfire.

    Gut & clean gills on trout leaving head on, stuff with precooked wild rice, chopped onion, mushrooms. Season to taste then wrap in tinfoil cooking it on the coals of the camp fire. When done pull head & back bone out, every tasty.
