Bear meat recipes...
I'm planning on processing my own spring bear. I have a good sausage recipe, but I have no idea how to make the 'hams' any good. Can I crock pot them in sea salt and garlic or what? Ideas for making the roasts/hams tasty, begin now.

Grilled bear Steak w/ Cream Sauce
1/4 cup mayo
1/4 cup sour cream
2 Tbsp prepared horseradish
1 Tbsp fresh minced chives
1 Tbsp fresh minced parsley
Stir all together in small bowl. Cover and chill.
1 1/2 to 2 lbs bear cut 1-inch thick
1/2 cup bottled Italian Salad Dressing
salt & pepper
Place steaks in shallow pan and marinate with italian dressing. Half an hour on each side. Pour marinade into small bowl and set aside.
Prepare grill. Cook on each side roughly 7-8 minutes (depending on size of cut) Baste with left over marinade ( italian dressing) each side. Bear meat needs to be thoroughly cooked 170 degrees (well done). Let steaks rest for 5 minutes ... wa la Serve with cream sauce.
