Ive never done this, but I would imagine the best way is to take all the meat out, vacuum seal it, freeze it,

    then send to me.

In BC I used to take all the meat out, make crab cakes, quick sear on both sides, then I would vacuum seal and freeze.

Turned out great when I thawed them.

We take the meat out of the shell and freeze it in a container of water to keep the meat from drying out.

Pick out the meat and either vacuum seal before freezing or freeze in water.
    Now what ?

Cook them in the shell like you normally would, then seal in a container of water. Peel them from the shell when you use them. This has worked for us over the years.
