    Default Pimento Cheese Spread

Back when I was a kid in North Carolina we used to eat pimento cheese spread sandwiches with tomato soup, this was a school staple back in those days. They actually were pretty good especially when you dipped them in the soup before taking the big bite. Anyway was wondering if anyone up here grew up eating them too and remembers how they were made? maybe even an Alaskan variation. Bet most kids nowadays have never even heard of them. Thanks

Thanks, here is another recipe I found on-line with a few more ingredients.

    • 8 oz. pkg. cream cheese, softened
    • 1/4 cup mayonnaise
    • 2 Tbsp. finely grated onion
    • 1 garlic clove, finely minced
    • 1 tsp. sugar
    • 1/4 tsp. celery salt
    • 1/8 tsp. pepper
    • 2 cups shredded cheddar or colby cheese
    • 1 (4 oz.) jar minced pimentos, drained
Combine cream cheese and mayonnaise and beat well until smooth. Add onion, garlic, sugar, salt and pepper and cream well until combined. Add Cheddar cheese and beat until blended. Then gently fold in the chopped pimientos. Cover tightly and refrigerate. Serve as a sandwich spread or as an appetizer with crusty french bread slices, apple slices, and crackers. To make into a dip, add more mayonnaise until desired consistency is reached.
