cooked some up tonight, and it might have been the best fish ive ever eaten! i post this mostly because i have fished with guys that would sooner throw them back as clean them. everyone should eat rockfish because the likely die after being caught anyway, and they are tasty!
try this recipe
1 1/2 tsp cayenne powder
1 1/2 tsp paprika
3 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1/2 tsp oregano
1/2 tsp thyme
coat the fillets with melted butter and sprinkle them with the well mixed seasonings then cook 2 min. per side in a very hot, dry cast iron skillet. works best with fillets of 1/2" or so, but just cook longer for thicker cuts. try to keep the fillets under 3/4". enjoy!
