What do you guys do with them? I caught 2 really huge ones last time out. When your in them you either lose some gear to them or you hurt them trying to release them. Does anybody eat them? How? dirt
Skate wings are excellent sauteed in butter and garlic. The taste and texture is very similar to large halibut cheeks - a little stringy but tender. Fillet the wings away from the body - just follow the bones near the midline and fillet out to where the meat ends (a few inches short of the end of the wing). I noticed the other night that Orso (nice restaurant in Anchorage) had skate wings as a special on their menu. They're good, and even restaurants are starting to notice.
