I've seen some great salmon recipes here but none for mousse. Here's mine:

Eastern Liberal Salmon Mousse

1/2 - 3/4 lb salmon filet
8 oz softened cream cheese
juice of one lemon
3-4 T finely chopped fresh dill

Season the filet with dill weed and salt & pepper and bake or grill until well done. Put it in the fridge for an hour or so until it's well chilled. Scraped the dark meat off the skin side (so it doesn't discolor the mousse), combine the salmon with the other ingredients in a food processor, and let 'er rip until everything is blended consistent and smooth. Let chill overnight so the flavor of the dill can come out and serve with mild chips or crackers that won't overpower the mousse.
