I've never thought of doing pesto halibut, do you have a recipe or just throw some pesto on the butt like any other sauce and cook?

Rosie's pasta made in Sterling, AK.
Alaska grown steamed broccoli, and coleslaw made from my garden cabbages.

But where did the milk come from? Seriously though, having a plate made up of such delicious fare all home grown in AK is great, even if the milk is from some other country!

Alaskan milk is still available from Havemeister Farms in Palmer even if Mat Maid is gone forever.

You can always get in on one of the local goat milk shares...

I haven't drank any kind of milk since I was weaned but I couldn't imagine drinking goat milk.

    STid,
I always start drooling when I get on this thread! I am wondering what a water bath is and if you do it for all your steaks or only potentially tough or gamey ones? Thanks. Roy

By water bath, I was referring to cooking Sous Vide (Under Vacuum) Just vacuum sealed and cooked in a hot water bath controlled by a Sous Vide unit. Allows for cooking at a set temp for long times without overcooking. For example I smoke beef brisket for 4 hours and then vacuum sealed and Sous Vide for 36 hours at 155 degrees perfect every time, the flat as moist as the point.
