Any one ever make sausage Snack Sticks in the oven instead of a smoker?? I drew a late season moose permit and was wondering if there was a way around using my smoker in the winter.
I have.... I used natural casings and a snack stick pack from LEM meat products. I put some liquid smoke in for a little extra smoke flavor. Also bought some pepporoni seasoning from a company out of Iron Mt. Michigan (P&S seasonings) that was great in sticks as well. These didn't need any liquid smoke and they turned out excellent! An automatic meat probe that comes with a remote is nice to have so you don't overcook your sticks too.
