    Default pellicule and pellicle?

    Just wonder if this is the same thing.And what it is when you smoke your fish?Ive never heard of it,is it the white stuff that forms on the fish when you smoke it?

    However it is spelled, my understanding is that it is the dried surface created prior to smoking. The white stuff is fat that seeps through the pellicle. I think there can be a couple of causes of this seepage 1) pellicle too thin and 2) smoker too hot for the pellicle to contain the seeping. I only cold smoke but I still get the white stuff when I get in a hurry.

    I responded to the other thread on smoking fish with the skin on or off and spelled it "pellicule". I've always spelled it "pellicle", but the spell checker didn't like that so went with "pellicule". That's how the OP'er spelled it, so good enough for me.

    I agree with pak that pellicle is the dried surface on the fish prior to smoking. I call the white globs "boogers" - and i don't think that is a technical term. I've found that too high a heat in the smoker will produce boogers.
    English is an odd language. It can understood through tough thorough thought, though.

    Default Pellicle

    The brine dissolves the cell membrane, this collects together and comes to the top when the smoker gets too hot.

    Kinda like Lava coming up to the surface.

    Solution is heat slowly, or hang your fish then it drips off.
