    Default Brine for smoking salmon

    Does anyone have a good recipe for brine mix? I am smoking up a bunch of salmon and lost my recipe.

    Any recipes that are tried and true would be greatly appreciated!

    easy recipe...
    brown sugar and salt on both sides of fish, set in cake pan for 8 hours, turn cuts over, let set for another 8 hours, rinse and smoke, every hour drizzle honey over top fish and let drip down to bottom trays, therefore you have different levels of sticky sweet smoked salmon.

    Our favorite recipe is: 3 large cans of pineapple juice, 4 lbs of brown sugar and 2 cups of kosher salt. This is enough for a five gallon bucket of fillets/pieces. I usually brine them about 12 hours and then dry the fillets to a glaze before smoking.
