    Default How to smoke halibut

I have heard smoked halibut is very good and would like to smoke some. My question is should I cure it the same way I cure salmon? I use 1 cup of sugar, 1 cup of brown sugar and 1/2 cup of kosher salt. I coat the fillets and let it sit for 12 hours before rinsing, drying and smoking (about 4-6 hours). Any personal recipes would be appreciated.

Get a really, really big lighter?

Sorry couldn't resist!! I did it just like salmon last year and it turned out good. I think it was drier than it should have been so I"d tone down the smoking time or the brining time.

Last time I did it from memory, was fillets from 20-30 lbrs, cut in strips, brined in teriyaki sauce. As an aside,I recently found a recipe for homemade teriyaki sauce, very easy, much cheaper than store bought.
Anyways, keep the heat down as buttski is very minimal on the fish oil scene,so very easy to overcook in a variety of ways.
