How to smoke halibut
I have heard smoked halibut is very good and would like to smoke some. My question is should I cure it the same way I cure salmon? I use 1 cup of sugar, 1 cup of brown sugar and 1/2 cup of kosher salt. I coat the fillets and let it sit for 12 hours before rinsing, drying and smoking (about 4-6 hours). Any personal recipes would be appreciated.

Sorry couldn't resist!! I did it just like salmon last year and it turned out good. I think it was drier than it should have been so I"d tone down the smoking time or the brining time.
Last time I did it from memory,was fillets from 20-30 lbrs,cut in strips,brined in teriyaki sauce.As an aside,I recently found a recipe for homemade teriyaki sauce,very easy,much cheaper than store bought.
Anyways,keep the heat down as buttski is very minimal on the fish oil scene,so very easy to overcook in a variety of ways.
