    Default How long can I leave salmon in brine?

    I started last night with 3 sugar to 1 salt. Can I leave it in the refridgerator another night or is 24 hours the max? I don't want to ruin it but my boys have soccer tonight. If so, it may be another late night of salmon.

    I've left it in brine for roughly 48 hours before and it seemed to turn out o.k.

    But then again I'm not very good at smoking salmon anyway....



    I would imagine it'd be all right so long as they'res enough salt/sugar in your brine to cure it.

    Depends on how salty you like your salmon. The longer it brines, the saltier it gets.

    Previously frozen salmon will absorb brine at roughly twice the rate as fresh salmon. pak

    I've left salmon in a brine in the fridge for up to 5 days, all of which has turned out just fine. My brine though is not very strong and the extra couple of days helps to set the flavor.
