    Question Smoked Salmon Question

    I have some silver salmon filets that I want to smoke. (Hot smoke). Skin on or skin off? Does it matter? What's best?

    Just my opinion, but I leave the skin on. It helps hold the meat together when removing it from the racks.

    I've done both and prefer skin on. Keeps it together and helps get it off the grill intact.
