    Question Smoked Salmon

    I lightly smoked a couple fresh Silver Salmon fillets today. Not cold smoke yet not a hot smoke either. Did it mostly for the flavor.

    Now...what "sauce" would you folks recommend when I go to finish cooking the fillets on the grill or in the oven? I don't want to cover the smoke flavor and at the same time, don't want to dry out the fillets either.

    One way I do mine that would be similar is to grill my fillets with a wood chip box on the grill so I smoke and cook at the same time. I like to use a Light Coating of Parmesan Cheese & Garlic Italian dressing. Comes out very moist with just a slight smoke flavor to it. Good Stuff.
