    Default dolly prep question

    Some of you have suggested soaking dollies in salt water after cleaning to firm up the flesh. My question is how long and are we talking just sea water or some type of mix at home? thanks in advance.

    Default Dolly do-right...

    Salt soaking dollies was pointed out to me by Ron Eller of Beaver Creek Lodge in Kodiak.

    Sea water will do fine. Simply soak from the time you catch until the time you return to preserve or prepare. A couple of hours works fine.

    Dollies are a fun fish and are willing players. You get 10 per day if you are in the mood. I love to take a blade to them on a back-split and then smoke these fish. This is always my custom on Kodiak and then I continually give them to friends...

    I caught my first dollies yesterday. I kept two for dinner. I soaked them for about 45 min. and they were still a little soft. But they were good baked in foil with butter and garlic!
