As a warm-up for the silly season, and due to the dearth of "date restaurants" in the Ninilchik region, the lodge and I donated a dinner to some lucky prom goers this last weekend. They had:
Seafood 4 ways- shrimp cocktail, poached king salmon (caught they day before) over cilantro-walnut pesto, seared scallops with romesco, and blackened ling cod with jalapeno hollandaise
Tossed Alaska greenhouse greens with cucumber, tomato, and huckleberry vinagrette
Chicken artichoke bisque with chive oil and creme fraiche; walnut olive bread
Ballontine of game hen with wild rice and moose sausage stuffing; bordelaise and soubise sauces; roasted tomatoes
