    Wink bear curry

    okay, more or less this is the recipe...

    dice one large onion and saute until almost translucent. add #3/4 (more or less) meat cut up small. brown meat and finish cooking onion.
    add one can diced tomatoes and a couple T curry powder (to taste, i make my own from a recipe in "the terrific pacific cookbook", a little heavy on the aromatics like cinnamon, mace, and star anise. not hot at all. you can get a good canned "madras curry" at sagaya. any indian curry is good) a t or so of turmeric, a t or so of garam masala, and maybe 2 T dried basil. simmer until meat is tender.
    at this point a little cayenne if you want, depending on how hot you want your curry.
    add a handful of raisins and a bag of spinach leaves cut coarsely , cook until spinach is totally done.
    (instead of spinach you could add a bag of frozen peas.)
    when veggies are done serve over rice or potatoes, with a dollop of plain yogurt and chutney.

    Stupid question, but are you sauteeing the onions in oil or butter?

    i'm sauteing in olive or canola oil, in a 10" cast iron skillet.

    We've been doing some curry dishes with the last of the moose meat. It is wonderful! Can't wait to try it with bear meat.
