    COLD smoke black cod fillet for 12 hours with a very mild brine of your choice. Freeze it.

    Cook a pot of rice soon as the rice stops boiling lay the fillet on the rice and simmer for 15 to 20. In my opinion only simmer/steam the cod for 15 min. it will only be about 70% cooked but this is how I had it and loved it. You wouldnt think but this brings out the fat of the cod. It becomes very rich. This is amazing a rich fatty tasting cod with no fishy or gamey taste. I think the key is mild brine just dunk for 15 min maybe or less. then the cold smoke this is the key i think. SOO good.

    With fillets I throw a bit of smoke on it then grill skin side down. It is the king of white meated fishes.
