    Post Kale and Chorizo Soup

    In the winter this is my go to soup, I almost never make it the same way but below you will find the core recipe. Whenever I need to fell good or I知 just plain sick! This soup is the cure. I literally want to do push ups after eating.

    Kale and Chorizo Soup

    What you値l need:
    2 table spoons of good Italian olive oil.
    1.5 pounds of chorizo sausage. Depending where you get it? chorizo comes in two varieties: hard and soft. If it is the soft chorizo I recommend that you put in the freezer for 15 minutes, this helps with removing the casings and dicing it up into bite size pieces. Otherwise you will have a big glob on your hands.
    1 large onion chopped.
    4 or 5 cloves of garlic chopped.
    3 quarts of chicken stock.
    2 bay leaves.
    1 pound of kale. Remove the stems chop it up and make sure to wash it completely.
    1 small can of drained / diced tomatoes.
    Salt & Pepper.
    1 pinch saffron
    1 tablespoon sweet paprika
    Sherry vinegar (Tablespoon).
    ス pound of dried white beans. Wash them first and remove the bad ones. You will need to put them in to a "large" pot with the 3 quarts of stock, bay leaves & a pinch of salt then simmer - 95% covered for 2 hours, or soft.

    If you don稚 want to deal with the beans you can use one lager diced potato or a can of diced potatoes and add it to your skillet with the onions.

    How to finish it:
    Heat up the oil in a large skillet over medium-high heat. Add the chorizo - brown it. Move it to a plate (with paper towels or a brown shopping bad so all the oil can drain.) Add the onion to the skillet lower the heat to medium and cook until soft. Add the garlic and cook a little longer. Stir in the tomatoes and the paprika. Cook for 2 minutes longer, and then transfer the contents of the skillet to the bean pot or (your if you used the potato痴? your large pot with the 3 quarts stock, bay leaves etc.). Stir in the saffron, the chorizo, and the kale. Bring back to a simmer and cook only until the kale is wilted. Season it with salt and pepper, stir in the vinegar. That痴 it.

    I like to add a little grated pecorino romano cheese to my bowl!

    This goes great with quality hard bread and butter.
