Ptarmigan, rabbit, and spruce hen all fall into my "red meat" category.

Stews are good as seen in your rabbit thread.

Thinly sliced and fried with onions is really good.

Stir fry with boiled or fried rice is good.

Country gravy and potatoes is good.

I don't have any real recipes... I just get hankerings and add dashes of this and that. It's always good.

As I mentioned in the rabbit posting, I did make a rabbit/ptarmigan stew once that was pretty awesome.

I also have made jerkey out of ptarmigan and spruce grouse that turned out good - would have been better smoked, but it was good enough with just the dehydrater.

Treat them like you would a roasting chicken, that is pluck them well and singe. Roast them in the oven using browning bags and a little wine, some brown gravy mix. You will have no complaints.

Remember how Chicken, Alaska got it's name?

I think the hardest thing for many of us to learn is, you don't need to cover everything up with a bunch of sauce to enjoy the wonders of good eating.
