    Default Smoking meat

    Anyone have any good methods/recipes for smoking wild game meat like moose or caribou or other meat like pork or beef ? I am just starting to read up on smoking meat and barbecue and so far it sounds like a very tasty and filling activity.
    Any annual barbecuing events held here in Alaska ? Would be a great social event especially for folks to have a good time and enjoy some good barbecue. Thanks

    We've smoked bear meat before by just hanging whole quarters in the smokehouse over a cold alder fire for a couple of days. We jarred up the meat after smoking. Had a nice flavor. Don't know about the bbq-ing events.

    I smoke pork butts and beef briskets quite often on my Big Green egg.Also make my own bacon as needed.There is the Ak state bbq cookoff in Fairbanks usually in July i think, I hope to chk that out sometime.I do like to put a variety of game meats in my cooker also.

    I smoke alot of briskets, and chickens for myself and my co-workers.
    I use pecan wood, and cherry wood most of the time. I am going to smoke some fish this afternoon.
