Canning salmon fingerlings like sardines?
We had an unfortunate accident here at the salmon hatchery. Thousands of sockeye salmon fingerlings went belly-up because of low DO (Dissolved oxygen). However, while netting up the fish I thought maybe I could can them like sardines. They're fresh, why not? I can always use them for bait for crabs or jigging for butts.
Does anyone have a recipe for sardines in mustard or tomatoes that would work with these little buggers? Should I just cut their heads and tails off and can them like herring?
I would think that you could just put a 1/8 tsp salt and then a tblspoon of mustard in them and can em up.
