How about Adak to be specific ? And when does the rut end and meat becomes edible ?

The WACH herd mostly sheds in Dec, if you find your self up this way, the cows shed in June.
The meats on the post rut bulls is very lean but in taste much "better" by mid December, but Cows are excellent, if you find a Cow that has no calf along. Cows "peak" in fat tenderness in March, then the baby inside accelerates growth and burns up their fats......then back to Bulls, who have nubs of antlers pokeing out about now.....
If you can't Kill it with a 30-06, you should Hide.

Adak, late November, generally the larger bulls lose their's first. Do you want bulls or cows? Bulls start rutting the end of the first week of October, the meat is usually good again by the fourth week of October. These are generalities.
It's a good meat hunt, but you'll be disappointed in the trophy quality.
