    Default Smoke Color???

    I am getting a yellowish smoke in my electric smoker. I am new to smoking. From what I understand it is supposed to be a blueish/white smoke and the yellow color is not good. I am doing some elk jerky that is at 200 degrees and I am using the little chief type chips. Is my smoke too cool

    Are you using ALDER wood, if so that is why, I like Alder for fish but, prefer Apple, Cherry, Pecan, or Hickory for red meat.

    I was using mesquite chips, the smoke seemed to get a little better as it got rolling. Does it usually start out with the yellow hue then clear up as it gets going? I added the chips late in the smoke and the temp was at 200 when I added them.

    it smokes like that due to lack of moisture-

    did you soak the chips prior to use?

    if you leave it yellow like that you will probably also notice a "bitter" taste in the product you are smoking.

    Don't worry- this is all learning, and having fun.

    just practice a lot before you have a bunch of guersts come over.

    or serve a lot of beer
