    Default Caribou heart

    Looking for suggestions on preparing this. Slice up thinly? Keep the internal parts like heart valves, etc. thanks for any help.

    My wife loves heart more than anything else on moose or caribou. We cut it in 1/2 slices. boil it for about 10 minutes. Then we dip in egg wash, roll in seasoned flour and pan fry in mixture of cooking oil with some bacon greese mixed in.

    We cut out the tough rubbery valves and dredge in flour, salt, pepper, and some paprika and deep fry- make sure you don't fry it too long or it will get extremely tough.

    I make some cuts internally to make more room and reduce shrinkage, but don't really remove much of anything; concoct a stuffing (I like mostly apples, with a few raisins thrown in); stuff, and wrap with bacon strips; place in a heavy, tightly covered dutch oven with a little water or broth to keep it moist, and bake slow until tender; finish under the broiler for a few minutes to crisp up the bacon and brown a bit; slice and serve. ...Food of the gods!
