    Default What is the best bear meat sausage?

    What is everyones opinion on what is the best tasting sausage to make with bear meat?

    I have three that I make and love them all.
    An actual bear brat, italian, and polish.
    All have great flavor and are juicy.

    I had Pioneer Meats in Wasilla turn my whole bear (small bear) into Pioneer Slims. They are a spicy hunter stick kind of thing... very good and I have been tearing thru a couple packs of them a week.

    With that said next year when I get a little bit bigger bear I will probably try some other stuff as wel. Would love some polish sausage and brats.

    We got half of my wife's black bear made into bacon and the other half made into bacon burger (burger with bacon ends ground in). Both were excellent and will become part of our regular rotation.

    +1 on the pioneer slims, I had my bear turned into those this spring, and have been munching on them all year.

    Pioneer Slims or their Jalapeño Cheddar dogs.

    I just had 36 pounds of caribou turned into Jalapeno cheddar dogs, and just can't stop eating them. I picked them up today and have probably eaten about 8 or 9. Next thing on the list to try is the jalapeno mozzarella summer sausage.

    Breakfast sausage. Mild or spicy but the patties are the bomb. Never had a bad batch,..

    I'd have to agree......bear breakfast sausage is pretty hard to beat.

    I had some of Duckslayer56's Pioneer slims from his Spring bear we got in Homer. Best tasting bear I'd ever eaten.

    Polish, spicy jalepeno cheese, spicy habanero cheese, breakfast, pepperoni, sweet hot Italian, and "bear stiks". Make em all - they are all good. We eat more of the breakfast than anything else.

    Any sausage you like. Leave the fat and grind with meat and treat it just like pork.

    my girlfriend votes for Italian...

    I like a warm breakfast (black pepper and red pepper flakes with powdered anigo added)
    makes great sausage gravy and biskets

    Like Jr2, I take my bear to pioneer meats and make the whole thing into sweet Italian sausage...make anything with it, pasta, lasagna stuffed peppers ...etc.

    bear from this past year was made into bacon from mikes quality meats in eagle river. They did a pretty good job
