Every boat is different and how you use it will also play a role in selecting correct pitch.
I had a single Yamaha 35/40 on a rigid inflatable and ran up to a 14 pitch (can't remember the diameter, but it was fairly small), I could do 40 mph on flat water. For regular use I had an 11 pitch prop and that worked well when I was loaded with gas/people or towing a tube on a lake.
Your boat is probably much heavier than what I ran, so I would guess maybe start at 11 pitch and see how that goes, if you can't get to the WOT range, then lower pitch, if they overrev, then add pitch.
