    Default Pastrami from a moose roast

    My wife noticed the Glenn offers a Pastrami product if you bring in a large roast, which I have from last years moose, approx 20lbs.
    Turns out Glenn sends it to Indian Valley meats to be done.
    My questions is, have any of you had the Pastrami made at Indian Valley?
    If so, how does it come back, ie....large 20 lb corned chunk or do they cut it in slabs and make it that way?
    Has anyone tried this product from Indian?

    they cut it into small maybe 2.5 lb chunks and is my favorite product from them-awesome
    I have such a hard time trying to decide which outdoor activity to do every chance I get!! Living in AK is a mental challenge

    Soooo, finaly got meat back.
    2 problems....
    1. I got someone else's meat back. (Extremely pissed about this as I took in a large roast, trimmed and cleaned, an absolutely beautiful piece of meat I was saving for something special........ Got back skinny lil chunks of meat full of sinew. I did my homework before dropping it off, they told me they would NOT cut up my meat but would process it however I brought it in and they guaranteed me my own meat back.) BOTH TURNED OUT TO BE FALSE STATEMENTS.
    2. It's rather salty. I know it's pastrami but it's very salty.

    I'll call them and discuss what happened.

    Spoke with Renee at Indian Valley.
    She offered to redo my order using a farm raised Elk roast in the next month or so.
    I'm taking her up on it.
    Can't complain too bad when they try and make it right.
