Caribou from Field to Freezer
Happy about our August caribou. for 15 years I was exclusively a caribou eater. Since moving to the NWT-Nunavut I switched to moose. So I was rusty on this caribou. I even forgot that you do most of the skinning with your fingers until I was almost done. So much easier than a moose I think in my old age I might quit moose. No axe or saw necessary either though I did use an axe to remove the antlers and missed the neck joint so used an axe to speed that up too. I have started liking a 5" knife to speed things up a bit...the Victorinox lamb skinner was very easy to use. I like the sweep for big meat cuts as you can see with the hind quarter removal.
