Making Black Bear Ham?
I would like to make a ham from my black bear and am wondering if anyone has had success with this and if they could share their recipe with me?
I am thinking I should brine it, then smoke it...not sure about whats best for black bear.
Use any brine recipie for ham, Alaska Butcher Supply sells a Maple Cure that's excellent and I've also smoked game hams using a simple brine similar to what I use for salmon. I brine for 5-6 days depending on size, then smoke for 6-9 hours starting with a low temp then end up around 170 for the last two hours.
