    Question Post your favorite canning recipes here :)

    My wife and I are getting into canning this summer. What are the favorite recipes? Thanks!

    My dad has a recipe for pickled halibut that involves white port, peppers, and onions; it's pretty amazing, have to dig up the recipe.

    Default Canned Smoked Salmon

    Here is my favorite. I lightly smoke the salmon first leaving the skin on and smoke it in my big chief with alder chips for about 2 1/2 hours. Then I peel the skin off chunk it up place in 1/2 pint jars or what ever size jar you want and can it. Great stuff.

    2 cups Sugar
    2 cups Brown Sugar
    2 cups Pickeling Salt
    2 gallons of water
    Brine overnight
    Smoke for 2 1/2 hours
    Peel off skin
    Pack in jars up to 1/4 inch from top
    Place in canner and cook according to mfg instructuions in my canner it is for 90 minutes.
